How Cold Brew Coffee is Made

With coffee that is typically brewed with heat, the hot water quickly extracts flavors and oils from the coffee beans. Because some bitter fatty acids and oils are soluble only at high temperatures, brewing coffee at lower temperatures results in a less bitter and more smooth taste.
